Happy Holidays everybody. In case any of you are having trouble getting into the spirit of things, let me pass on a recipe that I’ve been making for years and is highly requested during the holidays. I hope you make and enjoy them!

Rum Balls

3 c crushed vanilla wafers
1 c chopped pecans (chopped small)
1 c confectioner's sugar
1 1/2 tb unsweetened cocoa powder
3 tb light corn syrup
1/2 c rum
Confectioner's sugar

Combine crushed vanilla wafers, pecans, sugar, cocoa powder, corn syrup, and rum mixing together well. Using slightly dampened hands, shape mixture into 1" balls. Roll balls in confectioner’s sugar. Store in a tightly covered container. These travel and ship well and are better after they sit a couple of days.

BTW, is that cocoa powder 1.5 Tablespoons or teaspoons?

Hi Lawchic! That would be 1 1/2 tablespoons cocoa powder and 3 tablespoons for the corn syrup. And spray the measuring spoon with pam before measuring the corn syrup so it'll come off the spoon easier.

How's your book coming?

I will definitely make this desert. I've already printed the reciepet. I'm make them on Thursday and have then ready to consume this weekend.

What do you think about substituting a dark spiced rum?

Hey Troy! I always use the gold rum but a dark spiced rum should work if you like it. I've never tasted it so let me know how it works if you use it.
